Yes! Using all of the mentioned plants in salads and gaining some of their benefits by eating them is a great idea.
Reasons that someone might want to consume an infusion over eating them, is because the hot water extraction helps to draw out some of the medicinal compounds from the plants, making these more easily and quickly assimilated. This also means a higher dose can be achieved.
However the benefit of eating them is that you get the fibres and some compounds you may not get in the infusion, just potentially at lower levels. Plus this is a way to connect and interact with the plants on a raw, full bodied and very fresh level.
