For a kitchen scale, one that can convert units of measurement such as g, lb, oz, ml can be useful. Further, one that will provide you with measurements of 2 decimal places will mean that it is highly accurate.
For alcohol, 95% alcohol is only accessible by having a purchase permit through owning a business. We absolutely understand that this is not available to everyone and so using the highest percentage of alcohol you can access will still be great. If possible, for your Lemon Balm tincture use at least 45% if you can find one you like, if not, 40% will do.
For your fresh Lemon Balm tincture, you can make a strong extraction of a 1:2. This means that 2 mL of your tincture will be equivalent to 1 g of the herb. To do this, figure out how much plant material you have, and then multiply this by 2. This number will be at the amount of mL of alcohol you will use.
For example, if you have 100 g of lemon balm, you will cover it in 200 mL of alcohol for a 1:2 tincture. It would be best to chop up your plant material very well and shake the tincture every day.
If you referent to page 385 in the guidebook, you can see a recipe for a fresh plant tincture made with Yarrow and the same directions you can apply for your Lemon Balm tincture.
